What is a Green Restaurant?

According to the Green Restaurant Association, there are eleven elements to an environmentally-friendly food service:

  • energy efficiency and conservation
  • water use efficiency and conservation
  • recycling and composting
  • sustainable food
  • pollution prevention
  • recycled, tree-free, biodegradable and organic products
  • chlorine-free paper products
  • non-toxic cleaning and chemical products
  • green power
  • green building and construction
  • employee education

Currently, few restaurants tout their environmental attributes, so it is difficult for consumers to select them on this basis. The Green Restaurant Association is a nationwide organization that helps consumers in this respect. They take restaurants through a series of environmental steps and certify them after they initiate a comprehensive recycling program, eliminate the use of polystyrene foam products, complete four environmental steps, and commit to four environmental steps per year—all pertaining to the list above.

Boston Green Tourism is working to increase the number of GRA-certified restaurants in Greater Boston.  We help the GRA market its services and certification to Greater Boston restaurants and event centers.

Boston Green Tourism also recognizes and works with the Chefs Collaborative. The Chefs Collaborative is a national network of the food community that promotes sustainable cuisine by providing tools for running economically healthy, sustainable food service businesses and making environmentally sound purchasing decisions. While the Chefs Collaborative does not certify restaurants, its members support an important mission--to encourage sustainable practices and improve the quality and taste of the food we eat. They promote locally-grown food, sustainable agriculture and aquaculture, humane animal husbandry, well-managed fisheries, and conservation practices that lessen our impact on the environment.

Greater Boston’s Green-Certified Restaurants and Event Centers

Thus far, Greater Boston has 19 green-certified restaurants, all having earned GRA-certification:
